Raicilla is a traditional, artisanal Mexican spirit distilled from wild agave plants, related to mezcal but unique in its origin, process, and flavor. Produced exclusively in the state of Jalisco (19 municipalities), it represents a centuries-old heritage preserved by local "Maestros Raicilleros".
Unlike tequila or mezcal, our raicilla is crafted using underground earthen ovens, where the agave hearts are slow-cooked for several days. This ancestral method gives the spirit a natural, earthy depth without the heavy smokiness of mezcal.
Raicilla is traditionally classified into two main styles: mountain and coastal, each shaped by the agave species, soil, and microclimate of its region. The result is a complex, refined spirit with sweet and herbal notes, revealing the true character of Jalisco’s wild landscape.
